As a wrestler at Nassau Community College, Baroni won two All-American titles and placed fifth and second nationally. Nonetheless, he was kicked out of school during the second half of his senior year.
Baroni later attended Hofstra University and then, with financial support, transferred to Central Michigan University to earn a dual degree in biology and psychology. He also competed in six amateur bodybuilding competitions between the ages of 17 and 20, winning or finishing second.

Next, Baroni fought Matt Lindland again, a fight he had already lost according to the judges’ verdict. Baroni was defeated by Lindland by another judge’s decision in their rematch. At UFC 45: Revolution, he next faced Matt Lindland’s partner Evan Tanner, who would later become UFC middleweight champion.
Early in the fight, Tanner had the upper hand, but after the fight was stopped to control a cut on Tanner, Tanner regained control. As a result, the dynamics of the fight changed and the referee decided to stop the fight after Baroni landed three punches on the ground without resistance.
Shortly after, Baroni moved to Hammer House and rebounded with multiple knockout victories over Ikuhisa Minowa, Ryo Chonan and Yuki Kondo under the PRIDE Japanese Fighting Championships banner.
Baroni lost to Ikuhisa Minowa, with whom he had become competitive, by unanimous decision on June 4, 2006 at the Bushido Welterweight Grand Prix 183 lb (83 kg) competition which had taken place in 2005.
After Shamrock’s altercation with Renzo Gracie, Baroni and Frank Shamrock began a verbal battle. On June 22, 2007, the two participated in the Strikeforce Shamrock vs. Baroni pay-per-view, a joint promotion between EliteXC and Strikeforce.
The California State Athletic Commission announced after the Shamrock fight that Baroni had tested positive for the anabolic drugs boldenone and stanozolol. Baroni was sentenced to a one-year suspension and fined $2,500. Ultimately the sentence was upheld, but the ban was reduced to six months.

At Cage Rage 27, which took place on July 12, 2008, Baroni faced British contender Scott Jansen in his Cage Rage and welterweight debut. He knocked out Jansen to start the fight and almost finished it with an armbar in which he attempted to hyperextend Jansen’s arm.
Baroni made a return to compete in the UFC again in late 2009. He agreed to a multi-fight contract and faced TUF 7 winner Amir Sadollah at UFC 106 on November 21, 2009. Baroni was defeated by Sadollah via an anonymous decision.
