After graduating from college, Gutfeld worked as an assistant to R. Emmett Tyrrell at The American Spectator.
He went on to serve as editor-in-chief of several Rodale Press magazines and as a staff writer for Prevention magazine.
He joined Men’s Health in 1995 as a staff writer. In 1999, he was promoted to editor-in-chief of Men’s Health. A year later, he was replaced by David Zinczenko.
Gutfeld then became editor-in-chief of Stuff, a publication owned by Dennis Publishing. Under his leadership, circulation increased from 750,000 copies to 1.2 million.

Gutfeld hosted the late-night talk show Red Eye on Fox News Channel beginning February 5, 2007. The one-hour show premiered Monday through Saturday at 2:00 a.m. ET and Saturday at 11:00 p.m. 00 ET.
However, the show began airing at 3:00 a.m. Monday to Saturday from October 2007 and retained its 11:00 p.m. slot on Saturday evenings.

Bill Schulz was Gutfeld’s sidekick from 2007 to 2013 and Andy Levy handled complaints on the show. Both Levy and Schulz worked as bloggers for Stuff magazine, and Schulz had previously worked there with Gutfeld.
On July 11, 2011, Gutfeld joined the panel and co-hosted The Five on Fox News, a weekday political talk show at 5:00 p.m. ET.

By the end of 2021, The Five and Gutfeld! each averaged over five million viewers. Gutfeld has made appearances on The Adam Carolla Show and Coffee with Scott Adams.
By the end of 2021, the website Mediaite ranked Gutfeld as the 12th most important personality in American media.
